What is Soy Goose?
Soy Goose is called 滷(Lu) 水(Shui) 鵝(E) in Mandarin, it is a famous dish of Chaozhou, China. Lu Shui is a very traditional sauce and E means goose.
The key ingredients of Lu Shui sauce are light and dark soy sauce, and various spices such as aniseed, dry citrus peel and ginger are added to enrich the flavor of the sauce.
To make a Lu Shui Goose, the goose is wholly soaked into the sauce and cooked for hours until it has fully absorbed the Lu Shui flavor with its color turned to brown.
Besides goose, Lu Shiu sauce is also suitable for egg, tofu, shin, pig ear and pig large intestine etc., as they can also enhance the flavor of Lu Shui sauce, the sauce is usually reused and continuously replenished. The 'older' the sauce, the better the taste is.
